The pros and cons of hot holding cooked food.

Holding cooked and hot food has a shorter shelf life than chilled and thus the equipment choices can have a long-lasting impact. What to look our for with equipment upgrades;


  • When food is held at the correct temperature for maximum freshness and staste you reduce waste. When wastage is reduced, you obviously save on that cost but, perhaps more importantly, you allow stores to cook and display more types of cooked food.
