Ingredients:
Marinade:
- 500ml buttermilk or full cream milk with 30ml of white vinegar
- 1kg skinless chicken thighs
- 1tsp onion powder
- 1tsp garlic powder
- 1tsp paprika
- 1tsp celery salt
- 1tsp fine salt
- 1tsp kimchi liquid
- 1/2tsp white pepper
Flour:
- 500g plain flour
- 100g cornstarch
- 100g tapioca starch
- 10g baking powder
- 10g baking soda
- 2g xanthan gum
Method:
You can substitute buttermilk for full cream milk and vinegar. The acid in the vinegar will help to tenderise the chicken the same way as buttermilk and in my opinion do a better job.
- Place all the marinade ingredients together and leave in fridge for 24hrs
- If you’re feeling adventurous, try my flour mix ot you can use self-raising flour. Mix all flours together and coat the chicken and place on a wire rack and put it back in the fridge for 1hr.
- Place the chicken in the deep fryer for 3min, leave the chicken out to rest for 1min. Then place back into the oil for 2min
The different types of flour helps to create a crunch texture. The baking powders help to create bubbles and a lighter crispier coat. The xanthan gum will help keep it crispier for longer when held in Nuttall HUB or Flexeserve.
